The story begins in the shade. Our beans are cultivated under a triple-canopy of Rosewood and Jackfruit trees. This is not industrial farming; it is a slow-motion collaboration with the monsoon. We harvest only when the cherries are a specific shade of deep crimson—the color of a story nearing its climax.

02. Metabolic Stability

Our selection process is governed by the Low-Acid Mandate.

The Soil: High organic matter from diverse leaf litter naturally regulates soil pH.

The Chemistry: By avoiding chemical fertilizers and maximizing shade, we ensure the bean develops a complex sugar structure that acts as a natural buffer against gastric acidity.

03. Chiaroscuro (Light & Shadow)

We do not roast for "char" or "smoke." We roast for structural clarity.

We aim to caramelise the heavy sweetness of the Karnataka terroir while preserving the delicate oils (lipids) that provide a syrupy, full-bodied mouthfeel.
